
EASY CRANBERRY MUFFINS
Somedays you find it’s too late for breakfast, and a little too early for lunch. It’s a great excuse for BRUNCH. But you don’t want to spend ages in the kitchen, you want something tasty that’s quick and easy to prepare.
The Christmas holidays are the perfect time for brunch ideas. You’re off work enjoying an extra hour in bed, a big cup of fresh coffee and the morning papers.
How about freshly baked cranberry muffins. They’ll take 10 minutes to prepare and just 15 minutes to bake.
You will need:
250g Self Raising Flour
1tsp Baking Powder
50g Soft Margarine
75g Caster Sugar
175g Fresh Cranberries
2 eggs
250ml milk
Mix the flour, baking powder and margarine until you have fine crumbs, then stir in the sugar
Separately beat the eggs and milk together in a jug
Add the fluid to the dry ingredients at once and stir just enough to combine.
Use an ice-cream scoop to fill your muffin cases about 2/3 and top with 3-4 cranberries.
Bake at 180 degrees fan oven for 15 minutes
Enjoy while warm with a large cup of fresh coffee.
