There’s a couple of nights to go until the big Christmas weekend so maybe, like me, you fancy something seasonal but not too rich. Something you can whip up quickly and please everybody. How about my Sticky Cranberry Sausages.
Chipolatas are best for this recipe, or you can use the thin sausages and just cut them up with scissors into smaller pieces. Fresh cranberries are widely available in the supermarkets at this time of year and frozen ones for the rest of the year.
Slice up some red onions and cook them slowly over a moderate heat
Add the sausages and cook until the onions are sticky and the sausages golden brown.
Now add the Christmas flavours. A good dollop of cranberry jelly and a couple of generous handfuls of fresh or frozen cranberries.
Cook over a low heat until it starts to get a sticky glaze
Finish with grated orange zest over the top, season to taste and serve with mashed potato or sweet potato wedges.
